Us Measoms like to try new recipes, and enjoy introducing our little dude to a variety of flavors. I especially love cooking with him. Any recipe that is a, "dump everything into one bowl and mix," is a dream come true for both of us.
This gluten free muffin recipe is his favorite (as you can see from the smile on his face). He is always so proud when he accomplishes a task, like baking, cooking, cleaning, even flushing away his own pee. It's the little things in life, ain't it? As per usual, I digress. We are all here for the recipe, so let's get to it, shall we?
What you'll need-
2 cups almond flour
2 eggs + 2 egg whites (to make this mix vegan, add 1 tsp baking soda + 1/4 cup apple sauce instead of eggs)
1/4 cup good quality maple syrup
1/2 tsp baking soda
1 tbsp apple cider vinegar
1 tbsp good quality vanilla extract
2 tbsp coconut oil
1 cup of whatever mix-ins you want (blueberries, chocolate chips, raspberries, i.e.)
What you'll do-
pre-heat oven to 350 degrees.
place all ingredients (except mix-ins) into a kitchen aid mixer, and mix on medium to medium high until smooth.
fold in mix-ins with a spoon.
place muffin papers into muffin tin.
scoop batter into papers to the brim.
bake for 20-25 min.
remove from oven.
let cool.
enjoy.
Ohh that face is the sweetest!!! I am definitely going to try these for when my sister is here. Can you recommend an almond flour that is peanut allergy safe?
