Meal Prepping before Baby


I froze two weeks worth, or fourteen, complete dinners. I even wrote down cooking instructions, just in case my husband has to make them. 

For those of you looking to meal prep before baby, I am going to share some of my favorite easy freeze-n-cook recipes. After having DC, meals were all over the place, and there was lots of carryout. This wasn't the best for getting back into shape, our budget, or breast feeding. Because we have a little one to feed this go around, meal prepping has been in the forefront of my mind. I want us to have calm family dinners around the table with our new sweet babe. 

All 3 of these meals can be frozen and made in the crockpot-

Zesty Chicken for tacos

what you'll need...
4-5 chicken breasts
1/2 large white onion (chopped)
1 jalepeno (chopped)
2 tbs minced garlic
2 tsp garlic powder
2 tsp onion powder
2 tsp paprica
2 tsp chili powder
1 tbs adobe powder
1/2 cup chicken broth

what you'll do...
toss all ingredients into crockpot and cook on low 4 hours. 
shred. 
place back into crockpot and cook another 2-3 hours. 
serve with any toppings and tacos of your liking.
* we use yellow corn tortillas with fresh mango + avocado + hot sauce. * 

BBQ Chicken for BBQ Sandwich

what you'll need…
4-5 chicken breasts
1-2 cups bbq sauce of choice (homemade or store bought) 
1/4 cup red onion (chopped)
1-2 tbs minced garlic
dash of onion + garlic + paprika powder

what you'll do...
toss all ingredients into crockpot and cook on low 4 hours. 
shred. 
place back into crockpot and cook another 2-3 hours.
serve on any buns and cheese you prefer.
* we use sour dough rolls toasted with provolone. you can also add coleslaw if you're feeling extra daring. *

Roasted Tomato Chicken

what you'll need…
4-5 chicken breasts 
1 can fire roasted tomatoes 
2 tsp garlic powder
2 tsp onion powder
1/2 red onion (chopped)
2 tbs minced garlic

what you'll do…
toss all ingredients into crockpot and cook on low 6 hours. 
Serve over brown rice with sauce from crockpot.

Hope this helps with prepping for your new addition. If I have learned anything, it is that prepping when you have a toddler is key to survival. #forrealz
