Pot Pie


I like to think that taking the time to make a nice meal for my family is me going the extra mile or making them a treat.  In our house pot pie is my extra mile, and is certainly a treat. We love this recipe, and if it didn't make so many dirty dishes, and take so much time to make, we would probably have it at least once a week! But, with the weather getting colder, we are looking for deep comfort food, and this one hundred percent fits the bill.

what you'll need  
2 pieces of pie crust (a top and bottom) do you want me to share the recipe for that too? let me know in the comments below. (prepackage crust works great here as well, you can get some at trader joe's)
1 1/2 cups diced potatoes (peeled)
4 medium carrots (peeled + sliced)
1/4 cup extra virgin olive oil
1 large onion (diced)
1/2 cup flour
2 tsp salt
1 tsp dried thyme
1/2 tsp dried oregano
1 tsp black pepper
4 cups organic chicken broth #becasuecostco
4 cups cooked chicken (i prefer cubed)
1 cup frozen peas
2 cups frozen corn 
1 sprig fresh rosemary for top garnish

what you'll do
Preheat the oven to 425. 
Place potatoes & carrots in large pot and cover with water. 
Bring to a boil. 
Reduce heat. I like my veggies tender, but with a little crisp to 'em still, so cook to your liking here. usually about 8 minutes for us.
In large skillet add onion to oil, & cook about 3 minutes. 
Mix in flour & seasonings until blended. 
Stir in broth. 
Bring to a boil, stirring constantly, until thick. 
Stir in chicken, peas, corn & potato mixture. 
Remove from heat.
Roll out bottom pie dough & place into dish, pressing the dough up the sides of the dish. 
Add chicken mixture. 
Roll out top pie dough & place over filling. 
Pinch together edges. 
Cut slits into the top of the pie to let out steam. I cut in four, & top with sprig of rosemary.
Bake for 35-40 minutes, or until lightly browned. 
Let sit 10 minutes before serving.

** Note about crust- If you notice your edges of the pie getting a bit brown feel free to cover them with a layer of foil for remaining cooking time. **
