DC loves chicken, noodles, and carrots. It sounded like the perfect opportunity to get him to eat a hearty + healthy soup, and with cold and flu season here I am trying to keep those yucky vibes as far away as possible!
So, chicken noodle soup we made, and he totally devoured it. This recipe is also a set it and forget it, thanks to the crockpot. It's perfect for errand days. . . even lazy Mondays! #winning #kidapproved
What you'll need (serves 3 with some to spare) . . .
3 cups organic chicken broth
2 chicken breasts (uncooked + seasoned with Goya Adobo or whatever poultry seasoning you like)
5 carrots (peeled + chopped, you can spilt this into 2 carrots + 3 celery stalks)
1/2 onion (chopped)
1 tablespoon minced garlic
1-2 sprig fresh rosemary (chopped)
1 tsp thyme
salt + pepper to taste
hand full of elbow macaroni
What you'll do. . .
Pull everything into the crockpot.
Let it cook on low for 5 hours.
Pull out chicken + shred it.
Put chicken back in crock pot + cook 1-2 more hours.
The last 15 minutes of cooking add in elbow macaroni.
Cook pasta to your liking.
Enjoy!
*side note* i like to add some fresh avocado to my serving hashtag-pregancy craving numero uno. i also like to add a little salt + pepper.
