Salted Almond Dark Chocolate Chip Cookies
I could not bake a single thing for the life of me pre-wife life. If we are being totally honest, I burnt everything I baked, or it came out of the oven deformed and completely inedible! Finally, after DC, I grew a pair, and just started mixing things together. This was one of my favorites!
What you'll need:
1 cup of butter or two sticks at room temperature
2 tablespoons vegetable oil
1 cup brown sugar (tightly packed)
1/2 cup sugar
2 eggs
1 teaspoon sea salt & a little extra to sprinkle on top afterward
2 teaspoons vanilla extract
1/2 teaspoon almond extract (i really like the almond punch of flavor, so if you're really gutsy, try a whole teaspoon)
1 1/2 teaspoon baking soda
2 tablespoons of cornstarch
3 1/4 cups of flour
2 cup dark chocolate morsels or chocolate chips
What you'll do:
Preheat the oven to 350 degrees. Mix the butter, sugar, and oil together until it makes a nice ol' fluff. Add the eggs, vanilla, almond, and salt. Stir in the cornstarch and baking soda. Slowly add flour. The mixing process is a whole lot easier if you have a stand mixer. Then, roll a spoon full of dough into a ball, and place onto an ungreased cookie sheet. Cook for 8-10 minutes. Sprinkle with sea salt, and enjoy!
