Broccoli Cheddar Soup

What you'll need...

1/4 cup butter

1/4 cup flour

1/2 diced onion

2 tablespoons minced garlic

2 cups broccoli (chopped)

2 cups carrots (chopped)

1 bag shredded sharp cheddar 

1 bag shredded mexican cheese blend

2 cups chicken stock

1 cup heavy cream

dash of garlic powder, onion powder, nutmeg, and salt and pepper. if you want it spicy you can substitute the nutmeg for cayenne pepper.


What you'll do...

Melt butter. 

Saute onion and garlic.

Add flour. Mix well until it creates a paste like consistency. 

Add chicken stock, heavy cream, garlic powder, onion powder, nutmeg, and salt and pepper. 

Simmer.

Add broccoli and carrots. Mix and simmer until thickened. About 10 minutes.

Add cheese. 

Stir constantly for ten minutes, or until the broccoli and carrots are cooked to taste. 

Serve and enjoy.
