Zuppa Toscana


I shared this recipe via my IG stories and got some requests to share the recipe via my blog. I always get a little nervous to share recipes because I am no food blogger, and taking pictures of food is not my strong suit. But, here I am! Cheers to new things!

What you'll need-

4 cups chicken broth
1 cup heavy cream
1 white onion finely chopped
2 tablespoons minced garlic
1-1.5 pounds spicy Italian sausage
2 TSP garlic powder
2 TSP onion powder
1/4 TSP red pepper flakes
1/2 cup freshly grated parmesan
1 chicken bouillon cube
2 TBS extra virgin olive oil
1-2 potatoes washed and thinly sliced *I leave the skin on*
Kale off the stem or spinach *As much as is desired here*

What you'll do-

Add olive oil to pot. Bring to medium heat.
Add onions and garlic. Cook until fragrant. About 2 min.
Add sausage. Cook through.
Add chicken broth, potatoes, garlic and onion powder, red pepper flakes, and bouillon cube.
Bring to a boil.
Turn to low heat.
Simmer 30 min. I learned the longer you simmer it the better the flavor will be.
Add your greens. Watch them carefully as they cook fast.
Add heavy cream and parm. Bring to a quick boil and serve!
